Please accept my apologies for the dearth of postings currently. I can't seem to get caught up with my life - it seems to be running me ragged and I am always exhausted. Oh well, at some point things will equalize or if they don't, things have a way of resolving themselves! Anyways: Happy Thanksgiving! We had our German/American friends over for the 6th? year (no one seems to remember how many years we have done this, but I am pretty sure that the first year we had pork and African peanut stew.) The cooking commenced so:
Before too long the guests arrived bearing an edible arrangement which was soon unarranged.
Eventually we ate. This year I tried dry-brining the turkey (which is a fancy way to say I salted it overnight). I rubbed about 1/4 cup salt and herbs (rosemary, sage and lemon peel) under the skin and all over and lightly rinsed some off in the morning (to avoid overly salty gravy) before roasting it. I stuffed the cavities with onions, sage and the lemon and just used water and a little apple juice in the pan. The gravy turned out tasty - and I strained it this year to make it extra velvety smooth. We also had steamed broccoli (boring food for picky kids), mashed potatoes, roasted sweet potatoes, sourdough and rye stuffing and salad.
We also had a pumpkin pie (which reminds me - the spice combo can make or break a pumpkin pie and mine was not optimal - anyone have a secret combo they prefer?). AND for once my apple pie turned out... well, just right! JT proclaimed, "I don't like this pie.... I LOVE IT!" and one young guest suggested I open a pie restauarant. This time I decided to cook the apple slices ahead of time to make sure my pie was not dry. I used about 3/4 granny smith and 1/4 fuji and gala and followed the recipe from Williams-Sonoma (but cheated with pre-made pie dough), My helper ate mashed potatoes and the next day some sweet potatoes.
The next day I was worn out with a cold and the last dishes weren't washed until Saturday. Yep, that is how we roll here. No one wanted to scrub the roasting pan!
Hope you enjoyed your Thanksgiving - love from our family to yours.

Sounds like a wonderful Thanksgiving! This year I made two pumpkin pies and used about 2 Tbsp of pumpkin pie spice per pie. I received many compliments from my family. You might give it a try!I I used the Libby's brand pumpkin also. Your family picture is gorgeous! Love, AuntK
